There is no mystery as to what is required for a successful Valentine’s Day: a little chocolate, a card and maybe some flowers too. Though a little perfunctory, it is a holiday that reminds us to acknowledge and show some tenderness to those we love. This Valentine’s falls on a Thursday, at the tail end of the work week, leaving precious little time to make treats for our sweetheart. We have the perfect foil, chocolate silk brownie pie. It is sensual, yet homey, fool proof, fast and very chocolaty!
Chocolate Silk Brownie Pie with Chocolate Drizzle
1 store bought pie crust
3 Tablespoons unsweetened cocoa
1 stick of butter, melted
2 eggs
.25 cup all purpose flour
pinch of sea salt
1 teaspoon vanilla extract
.5 cup chopped walnuts or pecans (optional)
Preheat oven to 350 degrees F. Roll pie crust into a standard pie pan (not deep dish).Combine cocoa, melted butter, eggs, all purpose flour, salt and vanilla in a bowl. Mix with a hand mixer until combined. Pour into ready pie crust. Top with nuts, if desired. Bake for 30-40 minutes, until puffed and crust is golden. Serve with chocolate drizzle, fresh berries and vanilla ice cream.
Chocolate Drizzle
4 ounces bittersweet chocolate, chopped into small pieces
.5 cup heavy cream
Heat heavy cream until very hot, but not boiling. Pour over chocolate and stir until smooth and creamy. Let cool slightly and drizzle over pie.
