We all know what we are supposed to do when it comes to refined sugar. Avoid it. The documentaries, the statistics, the news reports are all horrifying and very convincing. It’s horrible for your health! 

But knowing what you need to do and actually doing it are two very different things. And when it comes to foods that are tasty and sweet, exercising control can sometimes feel downright impossible.

Chocolate bars tend to have this effect on me. It’s that way with everyone…right? They are affordable to buy, easy to toss in the cart, and those little squares will convince you pretty quickly that they are simple to eat in small doses. At least that’s what I tell myself when I break off a new square every 15 minutes. That’s portion control!

It’s not hard to justify eating chocolate, cocoa has awesome health benefits you can’t really argue with. It’s high in beneficial minerals and offers a legit happy boost to the brain. Ironically, it’s also always paired with refined sugar (even if they do call it organic cane sugar) that strips the body of the very same minerals the cocoa is delivering. Boo! 

Free Beer Friday At Tidal Creek Co-op

Fear not, I have a recipe that will allow you to combine 3 simple ingredients found at the Co-op into one lovely chocolately perfect treat. Mineral rich cacao powder is used and sweetened with raw honey (my favorite one is found in the bulk section at the back of the Co-op!) then combined with melted coconut oil.

It rivals having a chocolate bar in the house. For real. 

3 Ingredient Fudge Recipe

The picture doesn’t quite do these tasty morsels justice, they are delicious!

Ingredients

  • 1/3 cup coconut oil
  • 1/3 cup cocoa powder
  • 1/3 cup raw honey or maple syrup
  • Optional: vanilla extract, sprinkle of sea salt, cinnamon, nuts or nut butter, cayenne, etc.

Preparation
Gently melt the coconut oil in a small sauce pan.
As soon as it is melted, remove from heat.
Stir in cocoa and raw honey. 
Pour into lined mini muffin tins or a shallow pan. 
Freeze until firm. Keep refrigerated to preserve.

Tip: Try layering some fudge on the bottom of a lined muffin cup, plopping in a layer of fresh ground peanut butter, then adding another layer of fudge on top. It’s the best Reese’s Peanut Butter Cup you have ever had.
