These bars can also be jazzed up easily with your own creative variations such as adding other chopped dried fruits, drizzeling some melted Enjoy Life chocolate chips on them, or some chia, flax, or hemp seeds! Kids will love them and the best part is they are no bake- just mix, press into the pan, and refridgerate until hard enough to portion into bars. Toasted Coconut & Date Energy Bars (Vegan, Gluten Free)

Makes 12 bars

Ingredients:

  •  1# fresh organic Medjool dates, pits removed
  •  16oz fresh roasted almond butter
  •  1-1/2c unsweetened coconut flakes
  •  1/4c unrefined coconut oil
  •  1c raw almonds
  •  1c raw walnuts

Method

  1.  Pre-heat the oven to 325F.
  2.  Spread coconut flakes evenly onto a half sheet tray and toast in the oven for 10 minutes. Toss halfway through baking to ensure even toasting. Once done, remove and allow to cool to room temperature.
  3.  Meanwhile, in a food processor add the dates, coconut oil, and almond butter and process until it forms a smooth paste.
  4.  Add the almonds, walnuts, and cooled coconut flakes and pulse until they are incorporated but not smooth. It should appear textured and chunky.
  5.  Line a 9Óx13Ó sheet tray or baking dish with wax paper.
  6.  Spread the mixture evenly in the dish with your hands to form one   layer.
  7.  Place the dish in the refrigerator and allow to harden for at least one hour before portioning into 12 bars. Individually wrap the bars in plastic wrap for easy and healthy on-the-go snacks anytime!
