This week we are kicking off the Eat Local Challenge! As part of the challenge, we will be featuring recipes that focus on using the freshest local ingredients on our shelves right now. We will also be highlighting a few local products that you may not have known we carried such as Larry’s Beans produced in Raleigh, NC that form the base of all of our delicious organic, fair trade coffee and espresso drinks!
This week’s recipe is a twist on the traditional egg dish in Spain that is a quick meal to dish up for dinner that can also be served the next morning for breakfast! It features local kale, red potatoes, onions, and new pork breakfast sausage from SF Farms. As a bonus the basil came from my own gardens, but we have plenty of herbs in the store as well as organic seeds to start your own.
